2014 32 Chardonnay

The Fruit:

The fruit for this wine is sourced from the premium wine regions of South Australia. The 2014 vintage produced low crops and small berries which ripened perfectly giving rich, concentrated flavours and excellent acid retention.

The Winemaking:

The fruit was crushed and cold-settled before starting fermentation. The Juice was gently racked (siphoning wine off the lees into a new, clean barrel) prior to undergoing fermentation in stainless steel tanks for about three weeks. A small amount of the wine was aged in barrels. A portion of the blend underwent malolactic fermentation (adding a creamy texture) and all of the wine was aged on yeast lees for four months to add complexity and viscosity to the wine. After settling, filtering and stabilising, the wine was then blended and bottled.


2014 32 Chardonnay

The Comments:

The 2014 vintage was exceptional for Chardonnay and this wine is a classic example. Lemon, green in colour this Chardonnay has intense aromas and flavours of citrus, peach and nectarine with hints of honey. The creamy textural palate is soft with plenty of melon and sweet spices followed by a refreshing crisp finish. Chardonnay is well suited to chicken and poultry dishes, but is also great on its own.
